I am curious about the Mai Tai and will collect some different versions for it here that I will hopefully get an opportunity to try out in a few weeks when I get vacation. The original seems to be less than easy to accomplish since the original rum used for it "Wray & Nephew 17 year old Jamaica Rum" have been out of production since the 1940's and at last count was down to four existing bottles worldwide...

Here is the RumDoods Mai Tai experiments.

Mai Tai

1 oz Appleton Estate V/X
1 oz Demerara or Martinician rum
.5 oz Orgeat
.5 oz Orange Curacao
.25 oz Simple Syrup
.75 oz Lime Juice

Shake all ingredients with ice, strain into a glass filled with crushed ice. Garnish with a sprig of mint and a lime shell.

1 oz Lime Juice

Good but it was like drinking an Amaretto Sour with a bit heavier punch to it. My wifes comment "A girlie drink"... For next attempt I will need to make the rum cut through the lime and orgeat either by being more careful while measuring or using a rum with slightly more character like Sea Wynde....

1 oz Myers's Dark Jamaica Rum
0,75 oz Monin Orgeat
.5 oz Triple Sec
0,75 oz Lime Juice

This is much more rummy than my first attempt. the Myers's is noticeable and the orgeat doesn't dominate as in my first attempt. This is absolutely ok but it doesn't feel like it's where it's supposed to be yet.

0,75 oz Monin Orgeat
.5 oz Triple Sec
0,75 oz Lime Juice

There is a lot of orgeat in the beginning but when the rum takes over it feels slightly bitter. Something is not right. It does however gets better when the Ice have melted slightly. I will not repeat this rum mixture, I will just move on to other combinations.

This combination was actually pretty good and I might go back to it to compare with other mixes that have been good in search of the best combination of rums to use.

0,25 syrup

This is a good combination, maybe a bit sweet but the diplomatico is pretty sweet. Might Want to reduce the sugar syrup slightly next time.
