African Rock Chenin Blanc 2005

African Rock Chenin Blanc 2005

AFRICAN ROCK CHENIN BLANC 2005
Background
To ensure the finest quality, grapes are sourced from vineyards in cool growing areas. The winemaker works very closely with a team of viticulturists and he closely supervises pruning, suckering and canopy management practices for optimal crop yield. During the ripening season the grapes are tasted daily for ripeness and also chemically analysed to ensure they are picked when varietal flavours are most concentrated, tannins are ripe and there is a good balance between fruit and acid.

This wine is made up of 100% Chenin Blanc grapes.
The vineyards (viticulturist: Henk van Graan)
Grapes were sourced from a selection of vineyards in Paarl and Worcester, planted between 1970 and 1988 at
altitudes of between 130 m and 180 m.
The winemaking (winemaker: Louw Engelbrecht)
The grapes were harvested by hand at 21º Balling. In the cellar the juice was briefly kept on the skins before
being fermented at 13°C for 14 days.
