The Domaine les Pailles have developed from a sugar estate into theme park and center of cultural and heritage. The estate which spreads over several hectares, houses four restaurants, a museum and an international conference centre. The facilities available for a visitor of the Domaine les Pailles include rides in horse-drawn carriages, a miniature railway, a working replica of a traditional 18th century ox driven Sugar Mill which still produces the tropical cane sugar, a 1758 Queen Distillery where still today the estate distil the Domaine Les Pailles Rum, a spice garden, a quad-biking circuit and a children's playground.

In 1932, first-generation Mauritius-born Edward Clark Oxenham founded E. C. Oxenham & Cy. Ltd. and started producing wine from imported raisins. The smallness of the market, the island’s plantation economy, and Edward Clark Oxenham’s untimely death in 1948 did not make things easy for the Company, which first survived, and then slowly began to prosper, by sheer dint of hard work and perseverance.
The key turning point for both Mauritius and the Company came in the 1960s,when the country’s economy began to diversify into export-oriented manufacturing industry, and the Oxenham family’s first full-fledged oenologist graduated from the university of Dijon in France. Today, the family counts no fewer than three oenologists, all from the university of Dijon.
The Oxenham family still owns and runs the company today. The company’s activities are the sector’s most extensive in Mauritius. They go well beyond wine production (from imported pure varietal grape-juice concentrates these days) to include the importation and distribution of an impressive range of leading brands of wines and spirits from across the world, and the elaboration and production of cane and other spirits for the Mauritian market since 1987, and now for export too.
1964 The Company starts producing wine from pure grape-juice concentrate of such noble varietals as Cabernet Sauvignon and Cinsault, imported from various parts of the world.
1982 The Company starts importing and distributing wine from South Africa, as Sole Importers and Distributors of Bellingham wines.
1985 The Company starts importing and distributing wine from France, as Sole Importers and Distributors of Antonin Rodet wines.
1987 The Company obtains its Distiller Bottler licence and starts producing brandy, rum and other spirits.
1988 The Company starts importing and distributing Scotch whisky, as Sole Importers and Distributors of Whyte & Mackay.
1989 The Company moves from its old and now rather cramped premises in Port Louis to its new headquarters along the Saint Jean - Phoenix motorway.
2000 The Company obtains its ISO 9002 certification.

Ideally located in fertile valley which enjoys nice weather all year round, the sugar cane fields are grown in a unique microclimate which provides the natural water required according to the season. Hand-picked daily at dawn, the freshly-harvested sugar cane is transferred in less than four hours to the mills of the rum distillery. Its rapid conveyance and careful selection combined with the process which prevents the sugarcane fields from being burnt guarantee the purest juice extracts.
Rum is made by distilling the fresh, fermented cane juice rather than that obtained from molasses. It is a lengthy process-making used for only 5% of the world's production of high-quality rum. The filtered cane juice is slowly fermented with a specific selection of yeast which guarantees the finest aromas. The vesou is then distilled in a full copper column to obtain the White Rum or in two copper pots for the Double Distilled Rum. Those sophisticated techniques enhance their distinct flavors.
The fermentation and distillation processes use sophisticated techniques while preserving the environment. In line with the concept of sustainable development, the distillery concentrates its environmental efforts on recycling: nothing goes to waste. Indeed, the bagasse, the fibrous residue remaining after juice extraction is collected and turned into energy, the industrial fumes are cleared before being released into the air, the ashes are spread in the fields to act as fertilizers and the steam retrieved from the process is used to water the gardens.
The distilled Rum is stocked in stainless steel vats for at least six months. During this phase, regular stirring of the distilled product helps eliminate unwanted volatile components.
Part of the clear rum is also reserved for aging in oak barrels. Some will be aged for only 18 months in order to produce "Gold rum" and others for at least 4 years to obtain aged rum. During this aging process the rum acquires its aroma, body, taste and amber colour.

Saint Aubin Plantation
Located at southern Mauritius, the fields of Saint Aubin have been under sugar cane cultivation since 1819. The estate takes its name from one of its first owners, Pierre de Saint Aubin. There is also a vanilla plantation and an artisanal rum distillery. It distinguishes itself as the one where Mauritius’ very first agricultural rum was created, wholly from pure sugar cane juice. Agricultural rum is obtained by direct distillation of sugarcane juice after fermentation. 1819 agricultural rum is the first agricultural rum in Mauritius. Available in 4 flavors: Vanilla, Coffee, Spices and Coco.
The sugar cane that goes into their making is manually harvested. It is immediately sent to the mill where it will be slowly and gently pressed to extract the juice. It is exclusively this precious first-crush juice, commonly called “fangourin” in Mauritius, which is used to make the rums. This juice will undergo fermentation to become the “wine”. It will then be distilled in a traditional copper alembic. Only the heart of distillation is retained to create the rums. For the lengthening, they use their own spring water, sourced from the tea plantation domain of Bois Chéri.
